This tutorial is designed for people who have not baked bread previously.
In the online tutorial you will:
learn how to make a reliable gluten free sourdough starter, and
learn how to make a loaf of gluten free sourdough bread, you will also
make a gluten free sourdough starter, then you will
make a gluten free sourdough loaf.
You will also learn how to care for your starter so that you can continue making sourdough bread.
Throughout the tutoring:
we will correspond (by email or Facebook) about your progress and observations,
you will post photographs (on Facebook, or via Dropbox, or some other online means of your choice) of your starter culture, your pre-ferment (the first stage of making each loaf) and your sourdough loaf as it proofs, when it is ready for baking and after baking.
I will provide feedback and observations as well as answering your questions.
You will receive:
a recipe to make an authentic gluten free starter - because this starter does not use exotic materials it will make 7 days to make and mature the starter.
a recipe to make Buckwheat sourdough bread (the loaf pictured on this page - in my experience this is the most reliable gluten free sourdough to start learn with) please mention in your inquiry if you need a different bread,
notes on making starter and bread to accompany the recipes, and
a printable diary and note book to keep records of your progress in making gluten free sourdough bread.
You will need:
gluten free ingredients (these will be available from healthfood stores, supermarkets and online suppliers)
filtered or bottled water
glass or glazed earthenware mixing bowls
an oven capable of baking at preheating to 240 degrees Celcius and baking at 230 degrees Celcius for an hour
a baking tray
clean cotton or linen "tea towel" sized cloths
a cooling rack
if your kitchen is constantly above 20 degrees Celcius it will be an advantage to have a refrigerator

You will need to plan your time to learn to make sourdough.
This tutoring will extend over about 30 days, though this can take longer by arrangement.
